Sugar-free Meringue

Sugar Free, Dairy Free, Gluten Free and Nut Free

  • 2 units Egg whites

  • Salt

  • 3g Stevia

  • 75g Water

  • 12g Corn starch

  • 7g Gelatine powder*

  • 1 teaspoon Vanilla essence*

  • 1.Separate the egg yolks from the egg whites.

  • 2.Pour the egg whites in a bowl and beat them.

  • 3.Add the salt and, when they start to turn white, add the stevia in.

  • 4.Pour the water in a pot and disolve the corn starch in it. Add the gelatine powder and mix properly. Boil the mixture for 1 minute.

  • 5.Pour the mixture over the egg whites slowly.

  • 6.Mix completely and add the vanilla essence in.

  • 7.Use it before it cools down entirely.

  • *Watch out with the gelatine powder, as some of them may contain egg, milk or wheat traces.

  • *Watch out with the vanilla essence, some of them may contain traces of milk.

  • *This meringue can not be baked.

  • *It's very important not to let the meringue to cool down completely, otherwise it'll be really difficult to work with later on.

  • *The final result is quite differente from the traditional meringue, getting a more airy result, due to its lack of sugar. Nonetheless, we find it a very interesting sugar-free meringue alternative.

  • *You may substitute the stevia with any other powder sweetener.

  • *We used sweeteners, not sugar, in this recipe. However, due to its fat content, a moderate consumption is recommended for diabetics.
