2 units Egg whites
Salt
3g Stevia
75g Water
12g Corn starch
7g Gelatine powder*
1 teaspoon Vanilla essence*
1.Separate the egg yolks from the egg whites.
2.Pour the egg whites in a bowl and beat them.
3.Add the salt and, when they start to turn white, add the stevia in.
4.Pour the water in a pot and disolve the corn starch in it. Add the gelatine powder and mix properly. Boil the mixture for 1 minute.
5.Pour the mixture over the egg whites slowly.
6.Mix completely and add the vanilla essence in.
7.Use it before it cools down entirely.
*Watch out with the gelatine powder, as some of them may contain egg, milk or wheat traces.

*This meringue can not be baked.
*It's very important not to let the meringue to cool down completely, otherwise it'll be really difficult to work with later on.
*The final result is quite differente from the traditional meringue, getting a more airy result, due to its lack of sugar. Nonetheless, we find it a very interesting sugar-free meringue alternative.
*You may substitute the stevia with any other powder sweetener.
*We used sweeteners, not sugar, in this recipe. However, due to its fat content, a moderate consumption is recommended for diabetics.
