*For 30 units approximately.

  • 250g Wheat flour

  • 7,5g Fresh yeast

  • 160g Lukewarm water

  • 50g Sugar

  • 75g Roasted pumpkin

  • 1 pinch of Cinnamon

  • 1 pinch of Nutmeg

  • Sugar (for the topping)

  • Cinnamon (for the topping)

  • 1.Mix the fresh yeast with a couple of wheat flour spoons,add in some of the lukewarm water to form a smooth paste. Put it aside.

  • 2.Put the flour, the sugar, the roasted pumpkin, the cinnamon and the nutmeg in a bowl. Mix it together.

  • 3.Add the previously prepared yeast and mix it all together. Add in the rest of the water while kneading.

  • 4.When the mixture gets homogeneous, add that salt to the dough.

  • 5.Cover the dough with plastic foil and leave it to rest for 20 minutes.

  • 6.Add oil in a pot or pan and heat on medium-high to fry the fritters.

  • 7.Put the spoons used to prepare the fritters in the hot oil to avoid having pieces of dough sticking to them.

  • 8.Fry the dough using the spoons to shape the fritters.

  • 9.Once fried, and before they cool down completely, dip them in sugar and cinnamon.

  • *When frying the fritters, it's very important to keep the oil at a constant temperature, because if the temperature is too low, the fritters will take too long to fry and soake on oil. On the other hand, if the temperature is too high, they will brown quickly outside and stay raw inside.
