Basic Sponge Cake

Gluten Free and Sugar Free

*For a 20cm diameter cake tin or ring.

  • 4 units Eggs

  • 6g Stevia

  • 125g Yogurt

  • 100g Milk

  • 125g Sunflower oil

  • 270g Flour Mixture

  • 16g Baking powder

  • 1 teaspoon of Vanilla essence*

  • 1.Beat the eggs.

  • 2.Add the stevia and blend properly.

  • 3.Stir in the yogurt, the milk and the oil.

  • 4.Add the flour mixture and, once it is properly mixed, add the baking powder.

  • 5.Lastly, add in the vanilla essence.

  • 6.Mix properly all the ingredients and pour the mixture into the chosen cake tin, previously greased.

  • 7.Bake at 180ÂșC for 30 minutes approximately.

  • 8.Leave it to cool before unmoulding it.

  • *To prepare the dairy-free version of this recipe, simply subtitute the milk and yogurt with vegetable milk and vegetable yogurt.

  • *This sponge cake can be used in tons of different recipes. Also, it is delicious just like this.

  • *The vanilla essence can be subtituted for other essences, for example, cinnamon, orange zest, lemon zest, et cetera.

  • *We used sweeteners, not sugar, in this recipe. However, due to its fat content, a moderate consumption is recommended for diabetics.
